Domaine Thomas-Collardot
A rare new Burgundian domaine, Thomas-Collardot tells the story of Puligny-Montrachet. This artisanal enterprise spans just 2.5ha, with a winery so unassuming that we spent an hour searching for it before realising that we had been standing outside all along. And it is from this house – situated off the main square in the heart of the village – that Jacqueline Collardot and son Matthieu produce a handful of detailed, tense, and, quite simply, classic Puligny micro-cuvées.
Jacqueline inherited her father’s domaine, Pierre Thomas in 2010, producing her first vintage in 2015. After studying winemaking in Beaune, Matthieu begun work with her in 2018, and their portfolio of plots is now on its way to organic certification. The land is farmed by hand and horse, with Jacqueline and Matthieu intent on letting each vineyard speak for itself. In the winery they also use meticulous old school methods: wines spend two winters in the cellar (in mostly old oak) before being bottled in March, this extra time allowing them to develop depth and body. The beauty of a small domaine like this is that the owners can do things exactly how they want.
Production will only ever be tiny at Thomas-Collardot and yet there is plenty of definition between cuvées, from the intense mineral hit of the Village level ‘Les Enseignères’ to the graceful 1er Cru ‘Hameau de Blagny’, or vivacious Bourgogne Blanc ‘Les Petits Poiriers’.
