Since inheriting vines in some of Château-Chalon's most idyllic climats in 2007 – as well as a spectacular 300-year-old cellar in the village of Nevy-sur-Seille – François Rousset-Martin has transformed his family's winery into one of Jura's most exciting domaines.Against a backdrop of steep limestone cliffs and grazing livestock, he tends 10ha of low-yielding, organically-farmed Savagnin, Chardonnay, Poulsard and Pinot Noir across more than 20 tiny parcels.Vinified site-by-site with little to no sulphur, François is redefining expectations of Château-Chalon with a range of ouillé ('topped-up') wines that showcase the appellation's subtle terroir variations. He also makes a tiny amount of traditional Vin Jaune, aged sous voile for eight years in his cobweb-covered cave.Rousset-Martin's cuvées are layered with complexity and underscored by laser-like acidity and mineral tension and are, quite simply, spellbinding.
