At Domaine de Cassiopée, Talloulah Dubourg and Hugo Mathurin are reimagining the potential of Maranges, one of Burgundy's outlier appellations in the deep south of the Côte de Beaune.While honing their craft at Domaines Mugnier and Roulot in their twenties, Talloulah and Hugo saw the potential of Maranges' windy, forest-adjacent plots – an appellation traditionally regarded as too cold to produce 'fine' artisanal wines, where crops were mostly sold off in bulk.Since taking over the domaine in January 2020, the couple's dedication to great organic farming has transformed these underrated old-vine hillsides into one of Burgundy's most exciting terroirs.Domaine de Cassiopée's wines offer a beautifully expressive fruit character offset by mineral clarity and freshness. While the jewel in their crown is 'Les Plantes' – a plot of 110-year-old Pinot Noir surrounding the family home – Talloulah and Hugo also farm Chardonnay and Pinot Noir on two slopes of limestone and granite facing each other in the Hautes-Côtes de Beaune, as well as ancient Aligoté vines in Sampigny-lès-Maranges and Chassey-le-Camp.
