Back in 1988, Domaine Chavy-Chouet was tipped as Puligny-Montrachet's 'domaine to watch' by Jasper Morris in The White Wines Of Burgundy, an early promise upon which its hell-raising owner vigneron Hubert Chavy never delivered. But since Hubert passed away in 2014, his son Romaric Chavy has been working hard to reacquire that accolade.Thanks to a family history that included the marriage of a Ropiteau (from Meursault) to a Chavy (from Puligny), Domaine Chavy-Chouet has significant landholdings in the two villages, including the 'Clos Corvées de Citeaux' monopole in the heart of Meursault, prime parcels of 1er Cru Meursault 'Charmes' and 'Genevrières', and Puligny-Montrachet 'Folatières' and 'Champs Gain'.At the more modest end of the range are two of Burgundy's best value Bourgogne Blancs: 'Les Femelottes' – from a parcel just under Puligny's village vineyards – and 'Les Saussots' – from a site adjacent to Meursault 1er Cru 'Santenots'.Romaric has ended his father's practice of selling grapes to négociants and invested in a spacious new winery. Vinifications are traditional, with fermentation and maturation of the village and 1er Cru wines in oak barrels for 12 months (up to 20% new). The Bourgogne appellation wines are bottled after 10 months. Chavy-Chouet's hugely impressive range (which now extends to Saint-Aubin, Pommard, Volnay and Maranges) consistently shows excellent tension and mineral clarity, with clear definition between the different appellations and vineyards.
